Pu-erh tea can be purchased as either raw/sheng or ripened/cooked (shou), depending on the processing method or aging. The shou or aged-green variants as post-fermented tea.
Unlike other teas that should ideally be consumed shortly after production, pu erh tea can be drunk immediately or aged for many years; pu erh teas are often now classified by year and region of production much like wine vintages.

Brewing method:
Weigh the tea: tea to water ratio 1;20/1;25 5-7 grams of ripe tea is recommended

First brewing called rising tea and we don't drink it.Duration of brewing: 1st to 6th brewing time: Pour out the soup within 25 seconds after adding water. Don’t steep for too long time.
